Named as a Top 10 Wine of the Year by Wine Enthusiast on two occasions, Austin Hope Cabernet Sauvignon is a true icon of the region. It stands as a testament to Austin Hope’s vision and his relentless pursuit to elevate Paso Robles on the world stage.
With meticulous winemaking techniques, the grapes for this extraordinary Cabernet Sauvignon were harvested and fermented individually in stainless steel tanks. The process involved extended macerations and carefully managed pump overs to extract the maximum color and tannin from the grapes. The resulting lots were aged separately in a combination of French Oak barrels for a total of 11 months. The finest lots were identified through a combination of tasting and analytics, and the initial blend was assembled in late summer of 2022. The blend was then aged for an additional three months in a combination of new and once used French Oak barrels before the final racking and bottling.
Pouring into the glass, the Austin Hope Cabernet Sauvignon 2021 enchants with its classic ruby color, setting the stage for an extraordinary tasting experience. On the nose, captivating aromas of tobacco, dark chocolate shavings, fresh black currant, and subtle savory notes entice the senses.
