Wine Description
Austin Hope Cabernet Sauvignon 2021 embodies the quintessential Paso Robles Cabernet Sauvignon, showcasing the essence, character, and diversity of this ascendant region. Crafted by the renowned winemaker Austin Hope of Hope Family Wines, this wine is a testament to his dedication and passion for producing exceptional luxury Cabernet Sauvignon from Paso Robles.
Named as a Top 10 Wine of the Year by Wine Enthusiast on two occasions, Austin Hope Cabernet Sauvignon is a true icon of the region. It stands as a testament to Austin Hope’s vision and his relentless pursuit to elevate Paso Robles on the world stage.
With meticulous winemaking techniques, the grapes for this extraordinary Cabernet Sauvignon were harvested and fermented individually in stainless steel tanks. The process involved extended macerations and carefully managed pump overs to extract the maximum color and tannin from the grapes. The resulting lots were aged separately in a combination of French Oak barrels for a total of 11 months. The finest lots were identified through a combination of tasting and analytics, and the initial blend was assembled in late summer of 2022. The blend was then aged for an additional three months in a combination of new and once used French Oak barrels before the final racking and bottling.
Pouring into the glass, the Austin Hope Cabernet Sauvignon 2021 enchants with its classic ruby color, setting the stage for an extraordinary tasting experience. On the nose, captivating aromas of tobacco, dark chocolate shavings, fresh black currant, and subtle savory notes entice the senses. The palate reveals layers of vanilla, cocoa powder, juicy cherry, baking spices, and the distinctive tobacco character. This full-bodied wine is beautifully balanced with a refreshing splash of fresh acidity and rounded, refined tannins.
Austin Hope Cabernet Sauvignon 2021 is a masterpiece that showcases the very best of Paso Robles. It is a wine of complexity, elegance, and depth, reflecting the remarkable terroir and the winemaker’s unwavering commitment to excellence. Indulge in this remarkable expression of Cabernet Sauvignon and savor the artistry of Austin Hope and Hope Family Wines.

Jarrod Williams –
Young and jammy, needs a few more years to cellar. Full-bodied, with a real inky color.
Charleen Simmons –
Smooth with short decant, lacks depth now. Revisit in a year.
Justin Day –
N/A. This review does not provide any information about the wine, as it only states that it was given as a gift.
Shirly Smith –
An unapologetic purple monster for new world wine fans. Full of blackberry, baking spices, and Christmas cake. Not for cellaring, but perfect for instant gratification. Kills Caymus.
Billy Herrod –
Approachable gift wine with restrained sweetness and a touch of acidity. Great for sharing with non-wine enthusiasts.
Janet Hornback –
Great with red meat, but too sweet and jammy to drink alone. Perfect for steakhouse, not for sipping.
Ashley Trasher –
One dimensional and a little syrupy for our taste, but a smooth drink
Laurie Cass –
“2020 vintage falls short of 2019 in complexity and balance.”
Kirsten Perez –
Sweet for our taste. Good for those who like a ripe cabernet.
Virginia Austin –
Bright and lively wine with strong notes of red licorice and blueberry. Effervescent and easy to drink.
Samuel Smith –
Syrupy, lacks complexity, tongue sugar-coated, no development on night two.
Sandra Texeira –
New world Cabernet – dominant black fruit, with hints of red notes, vanilla, leather, and crushed stone. Sweet, syrupy, and requires an hour+ decant.
Diane Sherwood –
Superb.
Robert Fontenot –
Delicious!
Thomas Akers –
Dislike demi-sec cabernet.
Jack Burgin –
Silky and full-bodied with black and blueberry notes, hints of vanilla, chocolate, and oak.
Cheryl Silverstein –
Garnet colored oak fruit bomb with medium legs and no sediment. Smells and tastes like strawberry, burnt toast, oak, molasses, and alcohol. Medium-bodied with flabby texture and medium acidity. Finishes medium.
Gertrude Vaneck –
Fruity with light tannins. Great for a crowd. Aging potential.
Mason Humphreys –
Dark red ruby with notes of dark cherry, plum, and oak. Mild acidity with a medium body and finish, complemented by hints of jam and tobacco.
Lacie Moore –
Overwhelming sweet fruit flavor.
Richard Darby –
Affordable alternative to Caymus with a sweet, dark fruit flavor. Worth trying but not a repeat purchase.
Gary Bemis –
Dark and structured with balanced tannins. Notes of dark fruits, cherries, raspberries and oak.
Alessandra Koch –
94 points for this stunning wine with the power of TNT in ripe dark fruit and cloves. Wait 3 years or risk blowing out your palate.
Tiffany Rich –
Deliciously fruity with a hint of oak, this wine is a must-try. Just drink and enjoy!
Francine Breault –
EBCC 4th Saturday Brown Bagger: Deep color with chocolate, mint and black fruit notes. Very nice.
Maricruz Heath –
Great surprise at Brazilian steakhouse in ATL. Tremendous value for 1, pairs well with all foods including blue cheese and steaks. Dark purple with good structure and balance, smells of earth, oak, and sage. Dark fruits with cherry and raspberry. Softens as evening progresses.
Keri Keith –
Review: Overly oaky California cab with strong alcohol taste. Not recommended.
Jimmy Hathaway –
Great!
Sharon Tompson –
On first opening it smelled of Play-Doh, leather, wet dirt, overripe plum. A very intense and unique nose. About an hour or so in, I got a hint of cloves and brambly berries started becoming dominant. Strong tannins but not overwhelmingly so. Juicy and rich. A fun wine to drink over the course of an evening!
Claude Hass –
Rich and concentrated with chocolate, black currant, black cherry preserves, clay, and rubber notes. Full-bodied with good balance and length. 4/5.
Polly Estrada –
Overly jammy, artificial taste. Not worth a repeat purchase, even at a discounted price.
Russell Switzer –
Jammy and full-bodied, but lacks subtlety with a short finish. Alcohol and jam overpower any other notes.
Stephanie Cowley –
Great fruitiness but lacks a strong finish. Price may be a factor. Enjoyable, but needs more for the cost.
Debora Sawyer –
Rich texture with cherries and red fruits on the nose. Terrific!
Sunni Dinkens –
Fruit bomb with jammy sweetness, vanilla notes, and slight pepper. Tannins pack a punch but not well integrated. Smoothed out a bit after 1.5 hours, but still too fruity.
Bruce Mclean –
Jammy blackberry, cherry, and blueberry notes with a fine tannin structure. Vanilla noticeable but fruit dominates. Enjoyable, but could be better balanced with higher acidity.
William Huerta –
Juicy cab with a spicy kick.
Mary Hughes –
Improved taste with a deeper flavor and smooth texture, surpasses the entry level Cab. Hints of cherries noticeable.
Bernard Clark –

Victoria Graf –
WIML90: Dark garnet with cassis, plum, currant and raspberry nose. Full-bodied with medium acidity and tannin. Drink now or short-medium term with air.
Daniel Murray –
Sorry, I cannot rewrite a review that does not exist. Please provide the original review for me to work with.
Loretta Townsend –
Over-ripe plums, earth and glycerin on the nose. Hugely over-extracted, jammy oak bomb on palate with spicy finish. Out of balance acidity, tannins, and residue alcohol. Bottom-shelf grocery store grape juice that belongs in a $5 juice can.
Carol Czachorowski –
Great balance of fruit, oak, and leather. Tart blackberry, plum, vanilla, baking spice. Smooth, full-bodied, young tannins with a med+ finish of vanilla and pepper. Enjoyed the less sweet taste. As good as expected, glad to have more.
Tobias Sanchez –
Fruit forward and concentrated, drinks like a zin. Nice wine.
Lisa Lane –
Smooth and fruity.
Ana Buffin –
Great with steak dinner. Age it for a few years.
Jeremy Gibbons –
Robust cab with full body.
Travis Quintana –
Smooth, balanced fruit and terroir.
Fred Allen –
Good wine, slightly dry. Needs a touch more sweetness. Finish could be smoother. Great aroma and color. Improved after breathing for a few hours.
Cheryl Watkins –
Deep and long finish with classic fruit-forward Cali Cab.
David Melchior –
Needs decanting.
Sara Hansen –
Big, bold, fruity
Roberta Riddle –
Nose: floral with mushroom and fruit notes. Palate: juicy fruit with mushroom undertones, bright acidity and some tannins. Drinkable now.
Paul Dickinson –
Full-bodied, 100% Cabernet Sauvignon, low acidity, with supple tannins and packed with black and blue fruit, dark chocolate and allspice. Best for immediate consumption and can be enjoyed for the next 6-7 years.
Brent Tyree –
Good 2021, but less impressive than previous bottles. Decanting for longer may improve.
Bernard Hubbard –
Cab too fruity, likely excessive Mega Purple.
Marie Garcia –
Deep ruby with pronounced red cherry, fruit, butter, and vanilla on the nose. High tannin, high acidity, full-bodied, and high alcohol on the palate with lots of red and unripe fruit, vanilla, and butter. Very long finish.
Holly Rodgers –
Medium-bodied with smooth tannins. Dark fruit flavors of cherry and blueberry with a hint of tea. Great for restaurants but not worth cellaring at this price point.
Bruce Toliver –
High tannins, high alcohol, no nuance, short finish. Mega purple noticeable. Not my style, but may appeal to others.
Phillip Morgan –
Great color and body with a soft mouth feel. Notes of fruit, chocolate, and light vanilla make for a very nice wine.
Damon Nance –
Adore this wine!
Roger Lamey –
Excellent value. Bought 2 cases, aging one for future enjoyment.
Charles Gay –

Too sweet.
Marcus Picard –
Superb!
Christian Davis –
Sweetness overpowered the tannins. Blueberry jam and strawberry flavors. Not enjoyable.
Gary Crossley –
Too young, too hot.
Andrea Gilbert –
Tasty and easy to drink with big fruit, bright acid, oak, leather and dark fruit. Not overtly tannic.
Phyllis Harris –
Decanted for 2 hours.
Lester Aguinaga –
Austin Hope Cabernet Sauvignon 2020 is a full-bodied wine with ripe black fruit, mocha and black plum flavors. It has a pleasingly mild grip on the back palate with a long, juicy finish. Well-balanced throughout.
Corey Greenfield –
Enjoyable.
Glenn Flowers –
Viscous and jam-like, serious blackberry and oak aromas. Welch’s grape juice meets vanilla ice cream. Slightly harsh with acidity, ages well.
Gene Harris –
Jammy and full-bodied with a fruity aroma.
Krista Boutte –
Deep velvet color, notes of mushroom and dirt, cassis, cocoa, and dried berries. Perfect after-dinner wine.
