Crafted by the skilled hands of Winemaker Andy Erickson, the Mayacamas Cabernet Sauvignon 2019 stands as a stellar example of mountain-grown excellence. Originating from the esteemed Mayacamas estate, nestled within the 475-acre property on Mount Veeder, this wine embodies the unique terroir of its 12 Cabernet Sauvignon blocks, positioned between 1,800 to 2,200 feet above sea level.
Upon first glance, the color of the wine presents a deep, garnet hue, beckoning with its vibrant allure. On the nose, the aromatic profile is a complex tapestry of scents, beginning with an enticing blend of zesty sweet bay leaf and sassafras. This melds seamlessly into a heart of steeped red currant and mulberry fruit. The palate experience is further enriched by a backdrop of bright acidity and iron-laced tannins, giving the wine a distinct character and invigorating energy.
The winemaking process at Mayacamas Vineyards is marked by meticulous attention to detail. Grapes are hand-harvested in the cool dawn to ensure pristine condition. Following careful sorting and destemming, the must undergo a fermentation and maceration period ranging from 10 to 25 days. The wine matures in a mix of oak cooperage, including both large format foudres and barriques, for an extensive 36 months, followed by an additional year of bottle conditioning before release.
