    The vinification process is a testament to tradition. Fermented in stainless steel vats at a controlled temperature for an average of 15 days, this meticulous process ensures optimal polyphenolic extraction.     FontanaFredda’s Barolo then matures gracefully for at least two years in large oak casks from Slavonia and mid-France, followed by no less than 8 months of bottle aging. This patient maturation results in a wine of remarkable structure and longevity.
