The 2019 Emblem Cabernet Sauvignon from Michael Mondavi Winery Napa is a true gem. This wine is brilliant ruby in color with hints of purple at the core. The winemaking process behind the Emblem Cabernet Sauvignon is meticulous. Rob Mondavi Jr., the winemaker, ensures that the grapes are exclusively hand-harvested. During fermentation, colors, flavors, textures, and aromas are naturally extracted from the skins. After 14 days, fermentation is completed, and the wine is drained, the skins removed, and then gently pressed to capture the remaining juice. The California emblem is then aged in small French oak barrels (66% new French oak) for 18 months, allowing the blend of Cabernet Sauvignon, Petite Sirah, and Petit Verdot to develop depth, structure, and vibrant aromas.
The vineyard notes are equally impressive. Grown along the northeastern hillsides of Napa Valley, high above St. Helena, these vineyards are farmed sustainably, certified Napa Valley Green, and Fish Friendly. The Emblem Cabernet Sauvignon consists of 86% Cabernet Sauvignon, 7% Petit Verdot, and 7% Petite Sirah. It has a total acidity of 5.8 g/l, a pH of 3.75, and an ABV of 14.8%. With a limited production of only 6,394 cases, this wine showcases the careful blending and craftsmanship of the Michael Mondavi Family Winery.
