Stephan’s winemaking odyssey commenced with the establishment of Domaine de Courteillac in Bordeaux, the same year he entered the wine industry. His ambition and innovative spirit quickly led him to acquire Chateau Fleur Cardinal and Chateau Robin in the Cotes de Castillon, where over 15 years, he honed his skills and emerged as an artisan winemaker. Stephan’s craftsmanship and maverick approach to winemaking earned him recognition far beyond the confines of his vineyards. However, the stringent Appellation d’Origine Contrôlée (AOC) regulations in France began to chafe, as they limited his creative expression and desire to experiment with blends.
In 1996, driven by a vision to explore new realms of winemaking freedom, Stephan, alongside his wife Beatrice and their three children, embarked on an adventurous quest. This journey was not just a geographical shift but a leap towards realizing Stephan’s winemaking ideals. After a year of searching for the perfect terroir, the Asseo family discovered the untapped potential of Paso Robles’ west side in 1997, marking the birth of L’Aventure in 1998.
The inception of L’Aventure was a collaborative dream of Stephan and Beatrice, intertwining their lives with the essence of wine. Stephan brought to California not just his expertise but a desire to push the boundaries of winemaking. Beatrice, with her zest for travel and new experiences, embraced the challenge of starting anew in a foreign land. Their search for the ideal location led them from the well-trodden vineyards of Napa Valley and Sonoma to the then-undiscovered Paso Robles, recommended by a fellow French winemaker. The region’s unique terroir and the promise of creative freedom it offered were enough to convince them to lay down their roots and begin their “adventure.”
At L’Aventure, Stephan and Beatrice’s involvement goes beyond mere ownership; they are the heart and soul of the winery.
