Giancarlo’s dedication to winemaking mirrors his love for fishing, both activities requiring a keen understanding of time management.
Married to Francesca and a father of two, Giancarlo possesses qualities of constancy, sensitivity, and tenacity that he applies in the winery, just as he does while patiently angling by a riverbank. His winemaking philosophy revolves around meticulous attention to every aspect of the production process.
From studying the soils and vineyard exposures to selecting the ideal planting systems based on site characteristics and desired wine styles, Giancarlo leaves no stone unturned. He advocates for eco-friendly practices, favoring manual grape selection and nighttime harvesting during the harvest season.
In vinification, he minimizes mechanical intervention, opting for more natural processes whenever possible. For aging, Giancarlo prefers large Slavonian oak casks, allowing the wine to evolve gracefully in a way that aligns with his “philosophy of time.”
