    Paul Lato’s 2019 Cabernet Sauvignon Cavatina is a lovely Cabernet from Oak Knoll, matured for 19 months in 40% new French oak. Medium ruby-purple, it offers aromas of redcurrants, tobacco leaves, rose petals, cedar and pencil shavings with well-integrated new oak spices. The medium-bodied palate boasts seamless freshness, powdery tannins and detailed fruits, and it has a long, flavorful finish. 141 cases were made.

    Coming from Oak Knoll and brought up in 50% new oak, the 2019 Cabernet Sauvignon Napa Valley sports a deep purple/ruby, almost opaque purple color to go with lots of classic cassis, green tobacco, graphite, and cedar-laced aromas and flavors. Medium to full-bodied, beautifully textured, and classically structured, with plenty of textbook Cabernet herbal character as well as beautiful California fruit, it should have 15+ years of longevity.
