    The 2021 Jean-Paul & Benoit Droin Chablis has intense aromas reminiscent of Granny Smith apples, pear and citrus peel. On the palate, the medium-weight flavors are succulent and rounded with a refreshing salinity. This is a benchmark example of a classic Chablis, with hints of greengage and white peach, excellent concentration and length, as well as a mineral character to finish.

    The winemaker of this classic Chablis is Benoit Droin, who owns 10ha of AP Chablis. Benoit is a meticulous winemaker who carefully combines traditional viticulture with modern winemaking techniques and contemporaneous understanding of climatic conditions. Utilizing his family vineyard’s exceptional microclimates, he provides the perfect environment for the Chardonnay grape to express its terroir. The Chablis climate allows an extended growing season which allows the grapes to ripen slowly and fully, producing a crisp, mineral-driven and balanced Chablis.

    By relying on his vineyard’s geographical assets, Benoit Droin has crafted the ideal Chablis, blending his family’s decades of viticultural knowledge with his passion for winemaking. The finished wine offers intense aromas and flavors of Granny Smith apples, pear, and citrus peel, with rounded succulence and a refreshing salinity.     Winemaker Benoit Droin is a forteenth-generation winemaker and the head of Domaine Jean-Paul & Benoit Droin in Chablis, the northernmost region of Burgundy, France. With a 400-year family history in Chablis, Droin’s commitment to crafting the distinctive wines of the region is unparalleled. Droin joined the domaine in 1999, after receiving a oenology diploma from the Wine College in Beaune and completing studies in Dijon. Inheriting management of the estate from his father, Jean Paul Droin, Droin has continued the family tradition, notably by changes to oak utilization.
