Wine Description

Saviah Cabernet Sauvignon The Jack 2021 is a beautiful red wine crafted by the talented winemaker Richard Funk at Saviah Cellars. This wine is a high-quality, value-driven option from the Columbia Valley, known for producing some of the finest wines in Washington State. The Jack series is named in honor of the founder’s great-grandfather, reflecting the winery’s deep roots. With 75% Cabernet Sauvignon, this red blend also includes 8% Cabernet Franc, 8% Merlot, 6% Malbec, and 3% Petit Verdot, all sourced from esteemed vineyards like Eritage, Lonesome Springs, and Pepper Bridge.

The wine pours a deep ruby color, hinting at the richness within. On the nose, this exceptional wine shows off aromas of blackberries, black cherries, and currants, with hints of herbs and French oak barrels spice. The fermentation process, done in small open-top stainless steel fermenters, allows the flavors to fully develop. During fermentation, the cap was punched down by hand twice daily, and the wine was later transferred to French oak barrels, with 30% being new, to complete the aging process.
