Fruit for the 2023 vintage is sourced primarily from hillside vineyards in the eastern reaches of Alexander Valley, including south- and southwest-facing slopes and select benchland blocks. These sites are defined by mineral-rich volcanic soils with low organic content, a combination that naturally limits vine vigor and promotes concentration, tannin quality, and aromatic clarity. The red-hued volcanic soils of these hillsides are a consistent focus for Aperture’s Cabernet program and play a central role in shaping the wine’s tension, structure, and longevity.

The 2023 growing season allowed for an extended harvest window, with grapes picked between October 5 and November 3. This prolonged harvest contributed to physiological ripeness without excess sugar accumulation, preserving freshness alongside depth. The final blend is composed of 95% Cabernet Sauvignon, complemented by small amounts of Malbec, Merlot, and Petit Verdot to add nuance and layering while keeping Cabernet firmly at the forefront.

Winemaking is overseen by Jesse Katz, who emphasizes controlled extraction and textural refinement. All fruit is hand-harvested and delivered to the winery within hours, followed by meticulous sorting. Fermentation begins with a cold soak lasting four to seven days, using minimal air incorporation, before native yeast fermentations proceed at cool temperatures. Fermentation and extended maceration span 14 to 28 days, with each lot evaluated individually to achieve full extraction while maintaining an elegant, polished mouthfeel. Malolactic fermentation takes place in barrel, and the wine is aged sur lie for 18 months in a combination of French oak barrels—55% new, using 59- and 70-gallon formats—and a portion aged in concrete. The wine is unfined, unfiltered, and unacidified.

In the glass, the wine shows layered dark fruit supported by mineral-driven structure, fine-grained tannins, and balanced acidity, reflecting both vineyard origin and restrained élevage.
